	In The Kitchen Alboronía A dark golden dish whose rich, deep flavors and refreshing spicy aroma give it's North African origins away. Like so many foods with Moorish roots, alboronía has become a part of the Andalusian culinary vernacular. Like the classic dish, the ingredients (butternut squash, pears, and fennel bulb) are all cooked seperately and brought together in the end, leaving the tasty chunks intact. The slight sharpness of fennel and pears, the sweetness of butternut squash, and the pop of pumpkin seeds and herbs make this dish a good example of Moorish agridulce.
