Alboronía
A dark golden dish whose rich, deep flavors and refreshing spicy aroma give it's North African origins away. Like so many foods with Moorish roots, alboronía has become a part of the Andalusian culinary vernacular. Like the classic dish, the ingredients (butternut squash, pears, and fennel bulb) are all cooked seperately and brought together in the end, leaving the tasty chunks intact. The slight sharpness of fennel and pears, the sweetness of butternut squash, and the pop of pumpkin seeds and herbs make this dish a good example of Moorish agridulce. This autumn salad pairs great with many of our sherries, wines, beers and ciders!

In the kitchen, we take our olive oil very seriously, purchasing only the best we can find. We love to be able to extend these to our customers for their cooking at home. 
Duende branded bottles of freshly pressed Spanish olive oil are available anytime in our Bodega. 
 
 
Arbequina - Well balanced and complex. Rich and creamy in the mid-palate (we use it in our paellas.)
Hojiblanca - Fruity aroma and seamless pungency shine at their best when used raw with fish and/or salads.
Piqual -  It's the most versatile oil we carry. Great for cooking and/or finishing.
