	In The Kitchen Remolachas y Caquis This homage to the transitioning season we find a welcome addition to our menu. Beets from Riverdog farms, and Fuyu persimmons from Brookside farms meet together for a strikingly delicious pairing. The beets are shaved raw into the salad, lending a clear flavor of sweetness and earthiness. Accompanying them on the journey are avocados, walnuts and Payoyo cheese. Payoyo is a very special sheep and goat's milk cheese from the northern part of Cadiz, a region not normally known for their cheese, in fact, this cheese was brought back from extinction by cheese makers in the 90's. This salad is brought together at the end by a garnish of shallot-muscat vinaigrette. On Stage Kneebody Wednesday, November 6 | 8 & 10 PM | $15 each show  Kneebody is keyboardist Adam Benjamin, trumpeter Shane Endsley, electric bassist Kaveh Rastegar, saxophonist Ben Wendel and drummer Nate Wood. The band has no leader or rather, each member is the leader; they've developed their own musical language, inventing a unique cueing system that allows them each to change the tempo, key, style, and more in an instant.  The quintet met in their late teens while at The Eastman School of Music and Cal Arts, became fast friends, and converged together as Kneebody amid the vibrant and eclectic   music scene of Los Angeles in 2001. Since then, each band member has amassed an impressive list of credits and accomplishments over the years all while the band hascontinued to thrive and grow in reputation, solidifying a fan base around the world.  "We are a democratic, equally owned-and-operated band with shared leadership," says Shane Endsley. "Everyone brings in music and everyone votes on everything. And it's always been just the five of us." Have you ever tried a well-aged, barrel-fermented Albariño? We've recently received a shipment of  the 2007 vintage of Leirana Albariño, produced by legendary winemaker Raul Pérez. It is certainly the kind of thing you´ll only find at Duende! Sourced from really old vines in the best zone of Rias Baixas (Val do Salnès), the wine is an absolutely amazing discovery: its bouquet is extremely rich, full of biscuits, dried apricot, vanilla, roasted nuts... After all these years, the wine is still alive. We are serving it on its own or as part of an Autumn Flight along with 2011 Barranc dels Closos, a white blend from Priorat adorned with a distinctive aroma of beeswax.  2007 Forja do Salnés "Leirana", Rias Baixas. $14 glass / $42 bottle / $21 retail 2011 Barranc dels Closos, Priorat. $10 glass / $30 bottle / $15 retail Autumn flight: $12 On Tap  Jolly Pumpkin: La Parcela No. 1 Pumpkin Ale So Jolly Pumpkin brewery in Michigan wasn't known for their pumpkin beer, in fact they purposefully didn't brew one for many years to show they weren't just a pumpkin beer factory, despite their name. Well, they don't dissapoint with this incredible and artfully produced sour beer.
