Drawing on the celebrated Casqueria cuisine from southwest Spain where fried foods and lesser cuts of meat reign, Paul has created a delectable dish with local sensibility. Highlighting tripe fried to golden-perfection, with it's crunchy and creamy textures, it's tossed with fried Padrón peppers in the height of their season and served with a spicy Early Girl tomato sauce. 
Gerard couldn't think of a more delightful drink to serve with this dish than our Hidalgo-La Gitana Manzanilla Sherry. It's smooth savory and salty notes provide a great enhancement to the tripe.

The Tipton Sax Quartet
The Tiptons Sax Quartet cover genres from micro-big band, gospel, bluegrass, and Balkan to whimsical jazz and nocturnal funk. The Tiptons have been touring Europe and the US since 1993 and have released 10 recordings. The Tiptons Sax Quartet are Amy Denio,Jessica Lurie, Tina Richerson , and Sue Orfield. They will be joined by Scott Amendola on drums. Enjoy the driving force of horn splendor created by this historic all-women sax quartet!

Monk's Cafe Flemish Sour Ale
Van Steenberge Brewery

Originally named "Bios Vlaamse Bourgogne", the owner of the world-famous Monk's Cafe beer bar in Philadelphia convinced the family-owned Van Steenberge brewery outside of Ghent to release this beer under their own private label in the United States. Tart red fruit, rich sweet malt and balsamic flavors dominate. 
Hailing from the Dutch-speaking region of Belgium, Flemish Red Ales are a delicious introduction to the wide world of sour, tart and funky beer. To produce these beers, brewers typically take a fresh, sweet beer and age in oak for two years.

Over this time, the wild yeasts and bacteria present in the pores of the wood create a secondary fermentation, resulting in a sour, vinous final product. This tart beer is then blended back in with the fresh, sweet beer, ending with a nicely balanced brew.
