Roncal
Roncal is a sheep's milk cheese from Navarra, specifically
Valle de Roncal. It's made from the milk of Latxa sheep, a breed that
grazes high in the Pyrenees, known for their rich and flavorful milk.
Roncal has a nutty piquant flavor and firm texture which makes it
perfect for this pintxo. We place slices of this cheese into piquillo
peppers and grill them on the plancha. As the cheese is melting, it
caramelizes along with the pepper, resulting in a dish as interesting
texturally as it is exciting and flavorful. The richness of the cheese
is juxtaposed with briny and tangy Manzanilla olives, sweet currants
soaked with sherry, and pinenuts that echo the natural nuttiness of the
the cheese.

Motoko Honda, a
native of Japan, is a concert pianist, composer, and sound artist who has
created a distinctive sound through her holistic approach to music, and her
exceptional sensitivity in relating to other art forms and
technologies. Employing a "virtuoso technique paired with her
intensely imaginative mind" (Susan Dirende, L.A. Splash Magazine), and
with stylistic influences ranging from jazz to Indonesian music to
contemporary prepared piano, Motoko's structured improvisations are
intended to affect the skin, organs and minds of the listener rather than
simple recitations of rhythmic and harmonic themes. Called both a
"keyboard alchemist" (Chris Barton, L.A. Times), and the
"embodiment of a muse" (Greg Burk, Metaljazz), Motoko's
performances transport audiences on sonic adventures that transcend the
boundaries and conventions of contemporary music. Equally at home in
classical, jazz, or electronic music, Motoko is a musical force of nature,
bringing a unique creative sound to her wide-ranging collaborations.
In this concert,
Honda focus on acoustic piano and all new contemporary jazz and chamber
compositions, featuring some of the best Bay Area musicians working
today.

Originating from the small artisan home
breweries of Franconia, this unfiltered casked brew has a creamy crisp
effervescence. For most of it's history it has been unavailable outside
of Germany, but has enjoyed great popularity in this age of beer globalization.
The Zwickel refers to the apparatus attached to the cask to sample the
beer throughout the fermentation process. Lightly hopped with a
relatively lower gravity, this brew is refreshing while offering a
complexity that doesn't overwhelm your palate.

Fernando de Castilla
Fernando de Castilla, the legendary sherry brand, just got
distribution in California and now you can buy their wines at Duende! This
is a small producer with a history that goes back to 1837, and his present
owner, the Norwegian Jan Pettersen, has managed to bring his wines to the
very top of the line among boutique producers.
Their "Antique" line is
precious, and extremely affordable for the quality it delivers. The Fino
spent between 8 and 12 years in the solera (that would be more than any
other Fino), where it developed a very rare balance between
complexity and freshness, nuttiness and youth. Their Palo Cortado,
supposedly 35 year old average, shows a beautiful profile of citrus, white
chocolate and orange marmalade, with great intensity and acidity in the
palate. Olé!
