Morel Mushrooms
Hand foraged by a local source on Mt. Shasta, these morels
grow by burnt trees after a fire. They are super fresh and pungent.
We will cook them with caramelized onions, garlic and Sherry. They are
then mixed with home made goat milk cheese and spinach to create a new
stuffing for our canalones (starting from Wed 5/22)
